"Meat"loaf (Vegan)

This is a variation on a few recipes I've looked through.  Most loaf recipes are the same but some use ketchup, not BBQ sauce.  Some have difference seasonings.  Most use egg, in this case I've replaced it for us vegans with flaxseed & water.  I add cayenne pepper for a little kick. Of course, change it to your liking.


Ingredients
1/4 bottle BBQ sauce
1 bag of Morningstar "meat" crumbles
1/4 cup chopped onion
1/2 green bell pepper
1 garlic clove
1/2 cup bread crumbs
1 Tbsp milled flaxseed & 3 Tbsp water OR 1 egg (if you aren't vegan)
1 teaspoon basil
1 teaspoon parsley
1/4 teaspoon cayenne pepper
salt & pepper

Directions
1. Preheat oven to 350 degrees
2. Put vegetable oil in loaf pan.
3. If you didn't thaw your "meat" crumbles, heat up meat crumbles on medium heat on stove and chop further if needed (some crumbles are a bit to big and need to be chopped smaller).  If thawed, skip this step.
4. In bowl, mix 1/2 BBQ sauce with "meat", green pepper, onion, garlic, bread crumbs, and egg/egg replacement.  Add in seasonings and transfer to loaf pan.
5. Bake 35 minutes.  Add remaining BBQ sauce over loaf and continue baking for about another 15 minutes. Always keep an eye on food, ovens may vary.

***Be warned, this "meat"loaf does not cut like a normal meatloaf.  It will not cut into a perfect, well packed, squared.  Chances are, it might crumble a bit once you put it on your plate but the taste is still incredible.  Just don't be alarmed.  These are the sacrifices we make to eat meat free. =)
