Gluten Free Review - Betty Crocker Vanilla Cake Mix & Icing

As healthy as I prefer to eat, I still hate to miss out on cake or cupcakes at celebrations. Luckily there are new mainstream gluten free baking products coming out every month! Some have been grainy, disastrous, runny, crumbly... but the Betty Crocker gluten free cake mix and icing is just right! Thanks to Betty Crocker, the gluten intolerant can easily enjoy baked goods.

Processed foods side note: Processed foods are never technically 'good' for you, gluten free or not, but there is room to "cheat" when you want to. Healthy eating is a long term lifestyle, so eating a cupcake won't break you. Just make sure you actually enjoy the cupcake when you eat it, take time to appreciate it and eat slow, so you won't be tempted to eat more than 1! This gluten free cake mix is very runny, so I prefer to pour the batter into a pitcher before I pour into the cupcakes. Make life a little easier.

Baking Note - Gluten free anything cooks very differently from regular foods. Keep an eye on the cupcakes. I only baked these for 17 minutes. They do tend to bake more after you take them out of the oven, so keep that in mind, otherwise they may burn after you take them out of the oven. Same if you use this mix for a cake.
