Ingredients
1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, chopped
3/4 cup uncooked quinoa
1 1/2 cups vegetable broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt & pepper to taste
1 can corn
2 16 oz cans black beans
1/2 cup chopped fresh cilantro
Tortillas
Directions:
1. Heat oil in medium saucepan over medium heat. Stir in onion, garlic, and saute until lightly browned.
2. Mix quinoa into saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring mixture to a boil. Cover, reduce heat, and simmer 20 minutes
3. Stir corn into saucepan and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.
4. Serve in corn tortillas, as a topping on your salad, or by itself as a side dish!
Chris and I are trying this as a side dish tonight. I'll let you know how it turns out! (I miss you, by the way!!!)
ReplyDeleteYay! It's super good. And if you like it enough, do it as a main dish next time on some tortillas. Super yummy. Also, miss you mucho, too. We need to talk soon. I'll be in PA June 12-14 and will be driving right through Philly. Maybe I can make a pit stop near you for lunch/dinner.
