On to the recipe! I made this on the spot as a substitute dressing. It was so good I wrote down exactly what I put it to make sure I remembered for next time!
Ingredients:
3 oz bag Sun-dried tomatoes
1/2 cup Extra Virgin Olive Oil
pinch of black pepper
Italian herbs
1/2 Red bell pepper
garlic clove
2 teaspoons lemon juice
Banana pepper (Optional- we had it & wanted to try it. Worked super well. But it's not necessary)

Everything in the food processor. |
Directions:
Put in food processor & mix.

On the salad. |
This dressing is not quite the liquid dressing you think of but it is so flavorful that it tastes just like one. Put a spoonful on top of your salad & mix around for a great italian flavor.
