Black Bean Burger

Here's a super simple recipe for those of you who miss your burgers. I eat this without a bun (so I guess it's technically not a burger) but Mike eats it either with whole wheat bread or a whole wheat tortilla.

Prep Time: 7 minutes
Cook Time: 22 minutes

Ingredients:
1 can black beans
1 small carrot
1/2 onion
2 cloves garlic
1 flax egg- ground flax package directions (or regular egg if you're not vegan)
1 Tbsp chili powder
1 Tbsp cumin
Dash of garlic powder & onion powder
1 teaspoon hot sauce
1/2 cup cooked quinoa-NOT liquidy at all (or 1 cup bread crumbs if you do gluten/bread)

Directions:
1. Preheat oven to 375 & cook quinoa according to package directions.
2. In a bowl, mash black beans with fork (your hands work too).  It's okay if there are bean clumps, that's what make it so good.
3. Throw your carrot, onion, and garlic into the food processor until it's all finely diced.
4. In a bowl, mix your flax egg (or real egg if not vegan), chili powder, cumin, garlic powder, onion powder, and hot sauce. Pour into beans. Mix in garlic/carrot/onion mixture.
5. Add your cooked quinoa to the entire mixture and stir until you can form patties.



6. Place in oven for 11 minutes, flip, then another 11 minutes.



This makes 4 large patties or 6 small patties. (They can be grilled as well, 6-8 minutes on each side)
Top off with spicy mustard, BBQ sauce, ketchup, lettuce, tomato, onion, etc.

  1. I LOVE black bean burgers, haven't found a good recipe I like though so I usually end up buying Boca or Morning Star's pre made versions. I will honestly give yours a try :) Love you!
