Day 16- Almost ER & Easy Recipe

Today was terrible. I woke up with the most painful pains in my upper abdomen I've ever experienced in my life. I was wailing, crying, moaning, and writhing on the bed. My poor husband went to work late to take care of me. We almost went to the ER when suddenly it went away. He left for work and then it came back. More writhing, crying, and confused dogs. I tried to call him but he can't have his phone at the shipyard. I couldn't drive myself to the ER. Then, as quickly as it came, it left. It happened one more time, left, and then I went to work and have been okay for the rest of the day. Honestly, I should have gone to the ER but our insurance doesn't kick in until the 27th and I would have felt terrible to have a couple thousand dollar ER bill when it's something I could have waited out, especially when we're trying to...


BUY A HOUSE!  Yup! We've already decided we don't want to keep putting money into rentals and between reimbursement money from the move down here and tax reimbursement money, we'll have enough to do a down payment.

I really haven't eaten anything today other than yogurt (it was the only thing that would soothe my stomach) & 2 bananas.  I managed to whip up some raw ranch dressing though!

I love me some Hidden Valley Ranch, and am always finding new ways to spice up my salads and veggies.  This is made completely from raw ingredients and is so much healthier for you than dressing from the stores. I changed up the recipe a little bit from this one. Carmella's blog is incredible for fun raw meals, snacks, desserts. Check her out! You don't have to miss out on your favorite foods while eating food of the earth!

Raw Ranch Dressing
Ingredients: 
1 1/2 cups cashews (soak for 3-4 hours in water before using to soften)
3/4 cup water
3 Tbsp lemon juice (about 1/2 lemon)
1/4 cup Apple cider vinegar
1/3 cup extra virgin olive oil
2 cloves garlic
1 teaspoon garlic powder
3 teaspoons onion powder
1 teaspoon dill weed
1/2 Tbsp sea salt
1/2 teaspoon Italian seasoning (or Basil)

Directions:
1. Drain cashews. Throw the soaked cashews into your blender/food processor and pulse until cashews are in tiny pieces (not pasty).
2. Add all other ingredients to the cashews and blend until a smooth consistency.
3. Add 1/4 cup of parsley and 1/2 teaspoon of dill afterward and hand mix.
3. Dressing will thicken in the fridge.

This is as close as you'll get to that great creamy Hidden Valley Ranch we all love so much. In fact, I like this a lot better and I feel less guilty, too!  It looks like it, doesn't it?!

    > The pains might be your small intestines adjusting to all these new (raw) foods. It has only been 16 days, and it takes your body a few months to fully adjust to and function with this new lifestyle.
    > I went through the same thing with stomach pains (not as severe) when I changed my diet. And if you cheat / binge on snacks, you will feel those stomach pains. Your small intestines are probably healing and changing and loving the food you are feeding it, but you can't undo 23 years of eating in 16 days. It's a long process, but so worth it!
